Ingredients

8 oz all-purpose flour

14 oz self-rising cornmeal mix

1 oz sugar

18.6 oz Buttermilk

2 large eggs

0.25 oz Freshly ground black pepper

Directions

1. Combine Dry Ingredients 

Preheat the oven to 450° and mix up your dry ingredients. In a large bowl, whisk together flour, cornmeal mix, and sugar.

2. Keep Mixin’

In a separate bowl, mix your wet ingredients: buttermilk, eggs, and melted butter. Then,  carefully, add the wet ingredients to the dry mixture and stir to combine. 

Set the batter aside. 

3. Fill Your Skillet

Using the stove, melt a bit of butter inside your skillet for about 5 minutes. This way it’s pre-heated, non-stick, and ready for your batter. 

Pour in your cornbread mixture, and sprinkle cracked pepper over the top. 

4. Bake it 

Bake in the oven for 20 to 25 minutes. Once the edges are golden brown, it’s ready!

Notes

1. Avoid Overmixing

Stir the batter just until the ingredients are combined to keep the cornbread light and fluffy.

2. Get a Crispy Bottom

Make sure the skillet is hot before adding the batter. Test by dropping a small amount of batter into the skillet; it should sizzle.

3. Check Doneness

Insert a toothpick into the center of the cornbread. If it comes out clean, the cornbread is done.
