Ingredients

375g Overripe Bananas

225g Brown Sugar

Tsp Vanilla Extract

2 Large Eggs

100g Active Sourdough Starter

250g All-Purpose Flour 

Tsp Baking Soda

¼ Tsp Fine Sea Salt

60ml Milk

125ml Canola Oil

Directions

1. Prep the Oven & Pan

Preheat your oven to 360°F. Then, grease a loaf pan with butter and set aside.

2. Mix Wet Ingredients

In a large bowl, mash the bananas. Stir in the brown sugar and vanilla. Add eggs one at a time, mixing well after each. Then, stir in your sourdough starter until smooth.

3. Mix Dry Ingredients

In a separate bowl, sift together the flour, baking soda, and salt.

4. Combine Everything

Gradually add the dry mixture to the banana mix, stirring gently between batches. Next, pour in the milk and oil, and mix until just combined—be careful not to overdo it.

5. Bake

Pour the batter into your prepared loaf pan. Bake for about 1 hour, or until golden brown and a toothpick comes out clean.

6. Cool & Serve

Let the loaf cool in the pan for 10–15 minutes, then transfer to a rack. Dust with powdered sugar and serve with butter or mascarpone, if you like.

Notes

1. No Sourdough Starter? 

You can still make this with discard—it adds flavor, not rise.

2. Make it Your Own

Add chopped nuts, chocolate chips, or spices like cinnamon.

3. Save Some for Later

Wrap tightly and store at room temperature for up to 3 days, or freeze for later.
