Summary

Turn stale sourdough into crispy, flavorful breadcrumbs! Perfect for adding crunch to soup, casseroles, and roasted veggies. A simple way to reduce waste and level up your cooking!

Ingredients

450g Leftover Sourdough Bread

1 Tsp Garlic Powder

1 Tsp Onion Powder

1 Tsp Fine Sea Salt

2 Tsp Dried Oregano

1 Tbsp Dried Parsley

30g Grated Pecorino Romano

Directions

1. Prep & Preheat

Preheat your oven to 300˚ F and tear or slice stale sourdough into chunks. 

2. Blend or Crush

Pulse the bread in a food processor until fine, or use a rolling pin to crush it by hand.

3. Bake Until Crispy

Spread the breadcrumbs evenly on a baking sheet. Bake at 300°F for 15–30 minutes, stirring once, until they’re golden and crispy. Bake time will vary depending on bread type and freshness. Let cool completely.

4. Mix in Seasonings

Add garlic powder, onion powder, sea salt, oregano, parsley, and grated cheese. Stir well to combine.

5. Store & Use

Store in an airtight container at room temperature for up to 2 weeks or freeze for up to 3 months.

Skip the cheese for a dairy-free version.

For extra crunch, toast the breadcrumbs in a dry pan before using.
