Ingredients

8 Large Eggs

1/4 Cup Milk

Salt & Pepper to Taste

1 Tbsp Olive Oil

1 Small Onion, Diced

2 Cloves Garlic, Minced

2 Cups Fresh Spinach, Chopped

1 Cup Cherry Tomatoes, Halved

1/2 Cup Crumbled Feta Cheese

Fresh Parsley or Basil for Garnish


Instructions

1: Preheat & Whisk

Preheat your oven to 350° F and grab a mixing bowl. Add eggs, milk, salt, and pepper to the bowl and whisk until well combined. Then, set the mixture aside.


2: Sauté Spinach

Place a large skillet over medium heat and drizzle in olive oil. Add diced onion and minced garlic, and sauté until softened and fragrant, this should take about 3-4 minutes. Then, add spinach and cook for about 2 minutes, or until the spinach has wilted.


3: Add Tomatoes and Feta

Add halved cherry tomatoes, and stir to combine with the spinach. Then sprinkle crumbled feta cheese evenly over the vegetables.


4: Add Eggs

Pour in the whisked egg mixture. Then gently stir to distribute the ingredients evenly.


5: Cook Frittata

Cook the frittata on the stovetop for about 3-4 minutes, or until the edges are set but the center is still slightly runny.


6: Bake

Transfer the skillet to the oven and bake for 12-15 minutes, or until the frittata is set and the top is lightly golden brown.


7: Garnish and Serve

Remove the frittata from the oven and let it cool slightly. Garnish with fresh herbs, slice into wedges, and serve warm.
