Ingredients

8 Large Eggs

¼ Cup Milk 

Salt & Pepper to Taste

1 Tbsp Olive Oil

1 Small Onion, Diced

2 Cloves Garlic, Minced

2 Cups Fresh Spinach, Chopped

1 Cup Cherry Tomatoes, Halved

½ Cup Crumbled Feta Cheese

Fresh Parsley or Basil for Garnish

Directions

1. Preheat & Whisk 

Preheat your oven to 350° F and grab a mixing bowl. Add eggs, milk, salt, and pepper to the bowl and whisk until well combined. Then, set the mixture aside.

2. Sauté Spinach 

Place a large skillet over medium heat and drizzle in olive oil. Add diced onion and minced garlic, and sauté until softened and fragrant, this should take about 3-4 minutes. Then, add spinach and cook for about 2 minutes, until wilted.

3. Add Tomatoes and Feta 

Add halved cherry tomatoes, and stir to combine with the spinach. Then sprinkle crumbled feta cheese evenly over the vegetables.

4. Add Eggs

Pour in the whisked egg mixture. Then gently stir to distribute the ingredients evenly.

5. Start on the Stove

Cook the frittata on the stovetop for about 3-4 minutes, or until the edges are set but the center is still slightly runny.

6. Now Bake

Transfer the skillet to the oven and bake for 12-15 minutes, or until the frittata is set and the top is lightly golden brown.

7. Garnish and Serve 

Remove the frittata from the oven and let it cool slightly. Garnish with fresh herbs, slice into wedges, and serve warm.

Notes

1. Hot Skillet

Make sure the skillet is hot before adding the egg mixture to start cooking immediately and set the edges.

2. Extra Flavor

Add a pinch of red pepper flakes or fresh herbs like basil or parsley for an extra flavor boost.

3. Rest Before Serving

Let the frittata rest for a few minutes after baking to make slicing easier and to enhance the flavors.
