This easy-to-make recipe features a crisp, golden crust topped with a medley of seasonal vegetables and melted cheese.
1. Preheat
Preheat the oven to 425° F
2. Cook Veggies
Place a large skillet over medium heat and drizzle in olive oil. Add minced garlic and cook for about 30 seconds until fragrant. Then toss in onion, bell pepper, zucchini, and eggplant. Season with salt and black pepper, and cook for about 5-7 minutes, or until the vegetables are tender but still slightly crisp. Remove from heat and set aside.
3. Prepare the dough
On a lightly floured surface, roll the pizza dough into a rectangle, about 1/4 inch thick.
4. Assemble the flatbread
Transfer the dough onto a baking sheet lined with parchment paper. Brush the surface with olive oil, and sprinkle half of the shredded mozzarella cheese evenly over the dough. Then place the cooked veggies, before sprinkling the remaining mozzarella cheese on top. Finish with grated Parmesan.
5. Bake the flatbread
Place the baking sheet in the oven and bake for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
6. Serve
Once done, remove the flatbread from the oven and let it cool for a few minutes before slicing. Serve warm, and enjoy!
