Ingredients

1 cup sugar

1 cup water

2 cups strawberries

2 cups blueberries

4 tablespoons vanilla-flavor vodka or vanilla cream liqueur (optional)

2 teaspoons lemon juice, divided

cup vanilla-flavor yogurt

1 teaspoon vanilla extract

Directions

1. Make the Simple Syrup

In a small saucepan, combine the sugar and water. Bring to a boil, stirring until the sugar is completely dissolved. Remove from heat and let cool.

2. Add Vodka

Place the strawberries and blueberries in separate bowls. Drizzle 2 tablespoons of vodka over each bowl and let the berries soak.

3. Make the Red Layer

Blend the strawberries with ½ cup of the cooled simple syrup and 1 teaspoon lemon juice until smooth. 

4. Freeze

Pour a layer of the strawberry mixture into each popsicle mold, filling about a third of each mold. Freeze for about 30 minutes or until just set.

5. Make the White Layer 

Mix the yogurt with the vanilla extract until well combined.

6. Freeze Again

Add a layer of the vanilla yogurt mixture, filling another third of each mold. Insert popsicle sticks (use clothespins laid across the rim to keep the sticks in place) and freeze for about 30 minutes or until just set.

7. Make the Blue Layer:

Rinse the blender, then blend the blueberries with ½ cup of the cooled simple syrup and 1 teaspoon lemon juice until smooth.

8. Freeze Once More

Top the popsicles with the blueberry mixture, filling the molds to the top. Freeze until completely solid, about 4-6 hours or overnight.

9. Enjoy!

Once frozen solid, run the molds under warm water to release the pops. Serve immediately and enjoy the frozen, boozy goodness!

Notes

1. Keep It Smooth 

Strain the berry purees through a fine mesh sieve before freezing for an extra smooth texture.

2. No Vodka? No Problem

These pops are just as delicious without the booze. Simply skip the vodka for a kid-friendly treat.

3. Mix it Up

Experiment with other fruits like raspberries or blackberries for different flavors and colors.
