1. Preheat & Prep
Preheat your oven to 350° and coat your corned beef brisket with dry rub and steak seasoning. Then grab your dutch oven.
2. Fill the Dutch Oven
Line the bottom with onion wedges and lay the seasoned corned beef on top. Then, pour the dark beer and beef stock into the dutch oven. The liquid should reach the top of the meat.
3. Place in the Oven
Cover your corned beef with a lid and pop it in the oven to cook for one hour. Then, reduce the heat and cook for another two hours.
4. Flip the Brisket
At this stage, be sure to check the liquid levels. If things look like they’ve cooked down to low, add a cup of water.Then, turn your brisket oven and add in the potatoes and carrots. Sprinkle in some additional steak seasoning, salt and pepper, cover, and let everything cook for another hour.
5. Cabbage Patch
Add your cabbage to the pot, cover, and let everything cook together for one final hour.
6. Serve!
Serve straight from the pot, plate with a little spicy mustard and enjoy!
