Using a sous vide, you’ll lock in all the delicious fall flavors and bring out the warmth of spices in this perfectly spiced cider.
1. Toast the Spices
Place a skillet over medium heat. Then, add cinnamon, clove, star anise, black peppercorns, allspice, and nutmeg, and toast until fragrant.
2. Bag the Ingredients
In a large sous vide bag, combine the fresh apple juice, ginger juice, and orange slices. Then, seal the bag, removing as much air as possible.
3. Sous Vide the Cider
Submerge the sealed bag in the water bath and let it cook at 122°F for 2 hours. This slow, controlled heating will extract all the flavors from the spices without overcooking the apple juice.
4. Strain and Serve
Remove the bag from the water bath. Strain the cider into a large pot or pitcher to remove the spices and orange slices.
5. Enjoy Hot or Cold
Serve your spiced cider hot straight from the pot, or let it cool and refrigerate for a refreshing chilled version. Add an extra cinnamon stick for garnish if you’re feeling fancy!
