Ingredients

3 Cups Rolled Oats

1 Cup Almonds, Chopped

1 Cup Pepitas (Pumpkin Seeds)

¼ Cup Chia Seeds

1 Teaspoon Pumpkin Pie Spice

½ Teaspoon Salt

¼ Cup Pumpkin Puree

3 Tablespoons Oil 

¼ Cup Maple Syrup

¼ Cup Brown Sugar

2 Teaspoons Orange or Lemon Zest

Directions

1. Toast the Base

Preheat your oven to 350°F. Spread the oats, almonds, and pepitas on a large baking sheet. Toast for 10-15 minutes, stirring halfway, until everything is toasty and fragrant.

2. Mix the Dry Ingredients

Remove the toasted mixture from the oven. Stir in the chia seeds, pumpkin pie spice, and salt until combined.

3. Whisk the Wet Ingredients

In a small bowl, whisk together the pumpkin puree, oil, and maple syrup. Drizzle this over the toasted oats and nuts.

4. Sweeten & Zest

Sprinkle the brown sugar over the granola and stir gently to create clumps. Add the orange or lemon zest for a bright, fresh flavor boost.

5. Final Bake

Return the granola to the oven and bake for another 15-20 minutes, stirring occasionally, until crispy and golden.

6. Cool & Store

Let the granola cool completely on the baking sheet. Store in an airtight container for up to two weeks, or serve warm for a freshly baked treat!
