Ingredients

3 Tbsp Butter

1 Tbsp Olive Oil

2 Large Carrots (Sliced)

1 Large Leek (Sliced)

2 Medium Yellow Onions (Sliced)

Kosher Salt

3 Cloves Garlic (Minced)

4 Red Skin Potatoes (Chunked)

2 Quarts Unsalted Vegetable Broth

2 Cups Broccoli Florets

Fresh Chives, Snipped

Freshly Ground Black Pepper

Directions

1. Sauté the Veggies

In a large pot, melt butter and olive oil over medium heat. Add carrots, leeks, onions, and a pinch of salt. Cook for 10 minutes, stirring occasionally.

2. Build the Flavor

Add the garlic, followed by potatoes and broth. Stir well and bring to a boil.

3. Simmer Until Tender

Toss in the broccoli, reduce the heat, and let it simmer for 20 minutes—until the veggies are soft.

4. Blend & Finish

Ladle the soup into a blender and puree until smooth. Pour it back into the pot, season with salt and black pepper, and serve warm.
