Crepes are the ultimate blank canvas—light, thin, and endlessly versatile. Whether you’re filling them with sweet spreads like homemade Nutella or savory ingredients like cheese and veggies, this simple recipe is all you need to make delicious crepes.
1. Mix the Batter
In a mixing bowl, combine flour and salt. Add the eggs and whisk until combined. Gradually pour in the milk, melted butter, and water, whisking until the batter is smooth and thin. If your batter has lumps, you can strain it through a fine mesh sieve for silkier crepes.
2. Let the Batter Rest
Cover the batter and let it rest at room temperature for 20 minutes. This allows the gluten to relax, giving your crepes a tender, pliable texture.
3. Heat the Skillet
Preheat a non-stick skillet or crepe pan over medium heat, and add a small amount of cooking oil or butter to coat the surface evenly.
4. Cook the Crepes
Pour ⅓ cup of batter into the center of the skillet. Immediately tilt and swirl the pan in a circular motion to spread the batter evenly into a thin layer. Cook for about 1–2 minutes, or until the edges start to lift and the surface looks mostly set. Then, flip the crepe and cook for another 30–60 seconds until golden brown.
5. Repeat
Transfer the cooked crepe to a plate and repeat with the remaining batter, adding more oil or butter to the skillet as needed.
6. Fill and Fold
Spread homemade Nutella (or your favorite filling) onto each crepe. Add sliced strawberries, fold into quarters, or roll them up, and serve.
