Ingredients

Cups Pumpkin Puree 

2 Tbsp Olive Oil

1 Brown Onion (Diced)

3 Garlic Cloves (Minced)

1 Tsp Ground Cumin

½ Tsp Cinnamon

½ Tsp Turmeric

Cups Vegetable Broth

1 Tsp Maple Syrup or Honey

1 Cup Full-Fat Coconut Milk

Salt to Taste

Black Pepper to Taste

Directions

1. Sauté the onion and spices

Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened—about 5 minutes. Then, toss in the garlic, cumin, cinnamon, turmeric, salt, and pepper. Sauté for another minute until the spices are fragrant.

2. Simmer the soup

Add pumpkin puree and vegetable broth to the pot, stirring to combine. Bring the soup to a simmer, and let it cook for 15 minutes.

3. Add sweetness and creaminess

Stir in maple syrup and coconut milk. Then, blend the soup until smooth using an immersion blender, or carefully transfer it in batches to a blender.

Once blended, cook the soup for an additional 2 minutes.

4. Serve and enjoy

Ladle the soup into bowls and garnish with your favorite toppings like a drizzle of olive oil, greek yogurt, fresh parsley, or a sprinkle of red pepper flakes for some heat.

1. Blending tip

No immersion blender? No worries! Just let the soup cool slightly before blending in a regular blender.
