
Zucchini bread is the perfect cozy baked good. This easy recipe makes two makes two loaves (because one’s never enough), and is great for breakfast, as a snack, or as a gift.
1. Prep the Pans & Oven
Preheat oven to 350°F, and grease two 8×4-inch loaf pans with butter or nonstick spray.
2. Mix the Dry Ingredients
In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
3. Mix the Wet Ingredients
In a separate bowl, combine grated zucchini, oil, eggs, and vanilla extract.
4. Combine & Add Nuts
Slowly add the dry ingredients into the wet mixture, stirring until just combined. Then, fold in the chopped walnuts.
5. Bake
Divide the batter evenly between the two loaf pans. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
6. Cool & Slice
Let the loaves cool in the pans for about 10 minutes, then transfer to a wire rack.
Slice and enjoy warm or at room temp!
