Ingredients

2 Cups All-Purpose Flour

Cups Granulated Sugar

Tsp Baking Powder

½ Tsp Baking Soda

1 Tbsp Ground Cinnamon

1 Tsp Salt

2 Cups Grated Zucchini

¾ Cup Vegetable Oil

3 Large Eggs

2 Tsp Vanilla Extract

Cups Chopped Walnuts

Directions

1. Prep the Pans & Oven

Preheat oven to 350°F, and grease two 8×4-inch loaf pans with butter or nonstick spray.

2. Mix the Dry Ingredients

In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.

3. Mix the Wet Ingredients

In a separate bowl, combine grated zucchini, oil, eggs, and vanilla extract.

4. Combine & Add Nuts

Slowly add the dry ingredients into the wet mixture, stirring until just combined. Then, fold in the chopped walnuts.

5. Bake

Divide the batter evenly between the two loaf pans. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool & Slice

Let the loaves cool in the pans for about 10 minutes, then transfer to a wire rack.

Slice and enjoy warm or at room temp!

Notes

1. Make it Perfectly Moist

Let the grated zucchini sit for 5 minutes and lightly squeeze out excess water before using.

2. Go Nuts

Don’t like walnuts? Pecans make an excellent substitute!

3. Save Some for Later

Store tightly wrapped at room temp for up to 3 days, or freeze for longer storage.
