Ingredients

1 Can Black Beans (Drained & Rinsed)

1 Can Kidney Beans (Drained & Rinsed)

1 Can Chickpeas (Drained & Rinsed)

1 Cup Cherry Tomatoes (Halved)

½ Red Onion 

1 Cup Bell Peppers

¼ Cup Fresh Parsley 

Juice of 1 Lemon

2 Tbsp Olive Oil

Salt and Pepper, to Taste

Directions

1. Prep Your Ingredients

Rinse and drain all beans. Chop cherry tomatoes, red onion, and bell peppers into bite-sized pieces.

2. Mix It All Together

In a large bowl, combine the beans, veggies, and fresh herbs. Drizzle with olive oil and lemon juice. Season with salt and pepper, then toss everything together until evenly coated.

3. Chill Before Serving

Cover the bowl and refrigerate for 30 minutes to let the flavors meld. Then just give it a quick stir before serving!

Notes

1. Add Extra Flavor

Want more zing? Add a splash of red wine vinegar or a pinch of chili flakes.

2. Make it a Topper or Tortilla

Try it over greens or in a wrap for an easy lunch.
