Ingredients

3 Eggs

2 Cups Mashed Potatoes

1 Cup Shredded Monterey Jack Cheese

¼ Cup Chives (Plus Extra For Garnish)

Salt & Pepper To Taste

Directions

1. Preheat & Prep

Start by preheating your oven to 400°F. Then, grease a muffin tin. (Non-stick spray works, but a little butter? Chef’s kiss.)

2. Mix It Up

In a large bowl, combine the mashed potatoes, beaten eggs, ¾ cup of the cheese, and chopped chives. Stir it all together, and season with salt and pepper to taste.

3. Fill & Top

Spoon the potato mixture into your prepared muffin tin, filling each cup to the top. Sprinkle the remaining ¼ cup of cheese over the tops.

4. Bake Until Golden 

Pop the tin in the oven and bake for 15 minutes or until the muffins are puffed up and golden brown.

5. Serve & Savor

Let the muffins cool slightly, then garnish with extra chives. Serve warm, and watch them disappear before your eyes.
