Ingredients

2 Tbsp Olive Oil

1 Onion (Diced)

3 Cloves Garlic (Minced)

1 Tsp Fresh Ginger (Minced)

½ Cup Bell Peppers (Diced)

1 Tsp Italian Seasoning 

¼ Tsp Red Pepper Flakes

1 Tsp Sea Salt

½ Tsp Black Pepper

1 Lb Boneless, Skinless Chicken Breast

6 Cups Chicken Broth (Reduced Sodium)

1 Cup Broccoli Florets

1 Cup Cauliflower Florets

2 Tbsp Lemon Juice

Directions

1. Sauté the Aromatics

Heat olive oil in a large pot over medium heat. Toss in diced onion, minced garlic, and ginger. Stir for about 3 minutes.

2. Layer the Flavor

Add the diced bell peppers, Italian seasoning, red pepper flakes, sea salt, and black pepper. Cook for another 3 minutes, until the peppers soften and the spices release their aroma.

3. Drop in the Protein

Add chicken breasts and pour in the chicken broth. Let it all simmer together for 20 minutes.

4. Shred it Up

Carefully remove the chicken from the pot, shred it using two forks, and return it to the pot.

5. Veggie Boost

Stir in the broccoli and cauliflower florets. Then, simmer for an additional 10 minutes, letting the veggies soak up all the goodness.

6. Add Lemon & Serve

Remove from heat and stir in the lemon juice. Ladle into bowls and enjoy a healthy, wholesome meal.
