Ingredients

6 Jumbo hot dogs

6 Hot dog buns

4 ears corn, kernels removed

½ cup white onion, finely chopped

½ cup fresh cilantro, chopped

1 tbsp ground chili powder

Salt and pepper, to taste

Crumbled cotija or feta cheese

Chipotle aioli, for drizzling

Lime wedges, for serving

Oil, for searing

Directions

1. Cook the Hot Dogs

Heat a cast iron skillet over medium heat and add a little oil. Sear hot dogs for about 1 minute per side until browned and plump. Then set aside and keep warm.

2. Make the Elote Topping

Add corn kernels to the same skillet. Cook, stirring them occasionally, for 5 minutes, until they're slightly charred. Then transfer the corn to a bowl and mix in onion, cilantro, chili powder, salt, and pepper.

3. Build Your Elote Dogs

Toast up your buns, and place the seared hot dogs inside. Top with a generous scoop of elote corn mix. Add crumbled cheese, a drizzle of chipotle aioli, and a squeeze of fresh lime.

Then take a bite—and then probably another.

Notes

1. Add Spice

Want extra heat? Add jalapeños or a dash of hot sauce.

2. Make Your own Sauce

No chipotle aioli? Mix mayo with lime juice, garlic, salt, and a bit of adobo sauce.

3. Frozen is Fine

Use frozen corn in a pinch—just thaw and dry before searing.
