Grilled lettuce? Yep—and it’s amazing. This grilled romaine recipe turns everyday greens into something smoky, savory, and full of flavor. A quick sear brings out a new depth in romaine, while lemon juice, olive oil, and Parmesan tie it all together. 

Ingredients

2 heads romaine lettuce (4 halves)

3 tbsp olive oil (plus more for finishing)

Kosher salt, to taste

Fresh cracked black pepper, to taste

1 lemon (halved)

2 oz fresh Parmesan cheese

Directions

1. Preheat the Pan

Preheat a cast iron skillet over high heat until very hot.

2. Prep the Romaine

Brush each cut side of the romaine halves with olive oil, and sprinkle with a good pinch of kosher salt.

3. Sear It

Place the romaine, cut side down, into the hot skillet. Sear for 3 minutes, until charred and golden. Then, flip and sear the back side for 2 more minutes.

4. Finish & Serve

Remove from heat. Add a little more salt, a few cracks of black pepper, a drizzle of olive oil, and a big squeeze of lemon juice over the top. Finish with lots of Parmesan—shaved or grated, your call.

Serve warm as a side or light main.

Notes

1. Dry Thoroughly

Make sure the romaine is dry before grilling so it sears, not steams.

2. Add More Flavor

Want extra punch? Add a little garlic or anchovy paste to the olive oil before brushing.

3. Makes a Perfect Side

Serve with crusty bread or alongside grilled chicken or steak.
