Ingredients

2 tablespoons mayonnaise

1 tablespoon lime juice

1 ½ teaspoons chili powder

4 ears sweet corn, shucked and kernels cut off

¼ cup chopped cilantro

3 tablespoons cotija cheese

Directions

1. Mix the Dressing 

Combine mayonnaise, lime juice, and chili powder in a large bowl. Then, stir until smooth.

2. Cook the Corn

In a hot skillet, cook the corn kernels for 5 minutes without stirring. Then, toss with a spatula and cook for an additional 3 minutes. 

3. Combine and Garnish

Toss the cooked corn in the dressing. Add cilantro and cotija cheese, and mix thoroughly.

4. Serve and Enjoy

Serve warm and enjoy!

Notes

1. Char it

For an authentic flavor, get those corn kernels nicely charred. It adds a smoky, sweet taste that's irresistible!
