One-Pot Broccoli & Lemon Pasta

Summary

This pasta dish is as simple as it is delicious. Perfect for weeknights or when you’re short on time. 

Ingredients

1 Lb Penne

1 Lb Broccoli (Cut Into Florets)

1 Clove Garlic (Grated)

Cup Extra-Virgin Olive Oil

2 Tsp Lemon Zest

3 Tbsp Lemon Juice 

½ Cup Grated Parmesan (Plus Extra for Serving)

Salt & Pepper

Directions

1. Boil the Pasta

Bring a large pot of salted water to a boil. Add the penne and cook for 5 minutes.

2. Add the Broccoli

Toss the broccoli into the pot and cook for another 5 minutes, until the pasta is al dente and the broccoli is crisp-tender (soft enough to absorb flavors but still firm enough to hold its shape).

3. Drain and Toss

Drain the pasta and broccoli, then return them to the pot. Add the grated garlic, olive oil, lemon zest, and lemon juice. Toss well to coat.

4. Add Cheese and Seasoning

Stir in the Parmesan, then season with salt and pepper to taste.

5. Serve and Enjoy

Divide into bowls, sprinkle with extra Parmesan, and dig in!

Notes

1. Extra Creaminess

Add a splash of pasta water to the mix before tossing to create a silky sauce.

2. Amp Up the Flavor

Toss in red pepper flakes or a handful of fresh basil for a spicy or herby twist.
