Summary

With a mix of melty butter, garlic, and a sprinkle of parmesan, these potatoes turn into a flavor-packed side or snack that’ll make you wonder why you didn’t try this sooner. 

Ingredients

4 medium-sized sweet potatoes (or 3 large)

3 tbsp melted butter

4 cloves garlic, crushed

1 tbsp fresh parsley, chopped

¼ tsp Kosher salt (adjust to taste)

¼ tsp black pepper (to taste)

2 tbsp parmesan cheese

Directions

1. Preheat & Prep

Set your oven to broil, then chop your sweet potatoes into 1 ½ inch slices.

2. Boil to Tender

Place the slices into a pot of salted water, and boil for 20 minutes, or until they’re easily pierced with a fork.

3. Smash & Arrange

Transfer the boiled potatoes onto a baking sheet, then gently press down on each piece to flatten (think rustic, not perfect!).

4. Garlic Butter Magic

In a bowl, mix the melted butter with crushed garlic and parsley. Pour this over the smashed potatoes, getting every nook and cranny.

5. Season & Broil

Sprinkle with salt and pepper, then broil for 15 minutes, or until edges start to get golden and crispy.

6. Cheesy Finish

Sprinkle parmesan over the potatoes and broil for an additional 5 minutes, just until the cheese is melted and bubbly.

7. Garnish & Serve

Top with fresh parsley, serve warm, and watch them disappear!

Notes

1. Perfect Smash

If you’re after the best crispy bits, try using the bottom of a glass to flatten your potatoes gently.

2. More Cheese, Please

Feel free to add an extra sprinkle of parmesan if you’re a fan of cheesy goodness.
