1. Preheat the Sous Vide Machine
Fill a pot or container with water and attach your sous vide precision cooker. Then, set the temperature to 165°F and let it preheat.
2. Prepare the Jars
Crack one egg into each jar, and fill them ⅔ of the way with water.
3. Put a Lid on It
Screw the lids on the jars, but not too tight—just finger-tight to allow air to escape.
4. Drop in the Eggs (gently)
Once the water bath has reached165°F, gently place the jars into the container.
Let them cook for 15 minutes for a perfectly poached egg, but if you prefer a slightly firmer yolk, you can extend the time by a minute or two.
5. Lift, Cool, and Serve
Carefully take the jars out of the water (they will be hot), and let them cool for about 3 minutes before opening. Then, gently pour the contents of the jar out over a slotted spoon to remove the perfectly poached egg, and drain off the water.
