Ingredients

For the Sous Vide Chicken

4 Medium Chicken Breasts

Salt And Pepper, To Taste

For the Tzatziki Dressing

1 Cup Plain Greek Yogurt

2 Garlic Cloves (Minced)

2 Tbsp Fresh Dill (Chopped)

Juice of ½ lemon

Tbsp Olive Oil

½ Tsp Salt

¼ Tsp Black Pepper

For the Salad

½ Red Onion (Sliced)

1 Cup Cherry Tomatoes (Halved)

1 Cucumber (Diced)

4 Cups Mixed Greens

Directions

1. Sous Vide the Chicken

Preheat your sous vide to 145ºF, and season the chicken with salt and pepper. Then, seal it in a vacuum bag or zip-top freezer bag and cook in the water bath for 2 hours.

2. Make the Tzatziki Dressing

In a bowl, mix Greek yogurt, garlic, dill, lemon juice, olive oil, salt, and pepper until smooth. Chill while the chicken cooks for even more flavor.

3. Build the Salad

Dice the cooked chicken into bite-sized pieces and add it to a bowl with red onion, tomatoes, and cucumber. Then mix in the tzatziki dressing until everything is blended.

4. Serve

Spoon over a bed of mixed greens or tuck into a pita and top with extra dill or a squeeze of lemon.

Notes

1. Water Displacement Method

Place your chicken in a resealable plastic bag and partially close it, leaving a small opening. Submerge the bag slowly in water to push out the air, then seal it completely before fully submerging it for cooking. This method helps create a vacuum-like seal for even sous vide cooking.

2. Add a Flavor Boost 

Want extra flavor? Add chopped bell peppers or kalamata olives.

3. Save Some for Later

This salad keeps well in the fridge for up to 3 days, allowing you to store leftovers or prepare it ahead of time.
