Ingredients

1 Onion (Quartered)

4 Carrots (Quartered)

3 Celery Stalks (Halved)

5 Cloves Garlic

3 Tbsp Olive Oil

1 Tbsp Kosher Salt

½ Tbsp Whole Peppercorns

10 CupsWater

Directions

1. Sauté the Veggies

Heat olive oil in a large pot over medium heat. Toss in your carrots, celery, onion, and garlic, and sauté for about 5 minutes until they start to soften and become fragrant.

2. Season & Boil

Pour in 10 cups of water, then add the kosher salt and whole peppercorns. Bring the mixture to a boil.

3. Simmer & Strain

Once boiling, reduce the heat to a gentle simmer and let it cook for about 45 minutes. When it’s done, strain the broth to remove the veggies and peppercorns.

Notes

1. Don’t skip the Sauté

Cooking the vegetables first deepens the flavor of the broth.

2. Customize It

Add herbs like thyme or parsley for extra flavor, or use whatever veggie scraps you have on hand.
